Sweet and Sour Red Cabbage

Serves 2-3

In both looks and taste, this colourful dish is a far cry from your ordinary boiled or braised cabbage. The addition of red wine vinegar gives it a very eastern European flavour, and the egg yolk and cream add a smoothness which contrasts well with the crunchiness of the cabbage. It`s wonderful hot as an accompaniment to a traditional roast or cold as part of a buffet. You`ll also get a good supply of protective plant chemicals from the cabbage.

1 small red cabbage, finely shredded
1 egg yolk
4 tablespoons sherry or red wine vinegar
4 tablespoons soft brown sugar
50g/2oz unsalted butter, softened
125ml/4fl oz double cream
1 teaspoon English mustard

Cook the cabbage in briskly boiling water with a pinch of sea salt until just crunchy - about 5 minutes. While it`s cooking, gently heat the egg yolk, vinegar and sugar together until slightly thickened. Add the butter, cream and mustard and heat through, stirring continuously. Drain the cabbage well, return to the saucepan and pour the sauce over, stirring until well combined.
