Spring Onion and Anchovy Tart

This extremely easy tart, made with ready-made pastry, is perfect for picnics and al fresco summer eating. It can be served warm, but I prefer it cold with a fresh green salad.

Anchovies are rich in omega-3 fatty acids, essential for normal cell function and for healthy development of the brain and central nervous system during pregnancy and breastfeeding.

Sadly, they`re often under-rated because the tinned varieties can be rather salty. The secret is to rinse them well in slowly running water before use.

- 1 sheet ready-made shortcrust pastry
- Large bunch spring onions, halved or quartered lengthwise (depending on size), retaining about 2.5cm/1in of the green tops
- 2 x 50g/2oz tins or jars of anchovies in olive oil, rinsed well in cold water
- 300ml/10fl oz creme fraiche
- 2 eggs

Lightly butter a large, loose-bottom flan tin. Line with the pastry. Arrange the spring onions on the top, with an anchovy or two between each slice. Beat the creme fraiche with the eggs until smooth. Pour the mixture over the spring onions and anchovies. Bake at 220C/425F/gas mark 7 for about 30 minutes until firm. This tart looks and tastes better if you allow the surface to brown slightly but don`t burn the pastry.
